coffee tasting bad on ozempic is one of the more specific taste changes that gets mentioned and it can be stubborn. the shift to 'beyond caring' about food in the OP is the bigger picture version of what you're describing with coffee. some people find the taste changes slowly reverse when the dose settles or when they switch mechanisms.
 
Food noise returning at 1mg after 2.5 years is consistent with what's documented about dose-response tolerance. The mechanism isn't fully understood but receptor sensitivity appears to shift at longer durations even when the pharmacokinetics stay constant. Moving up to 2mg or switching to tirzepatide would be the two most evidence-supported options from here.
